  2. * Preheat Oven to 350
    * 1/2 cup butter
    * 1/2 cup sugar alternative ( I use 1/2 cup granular Erythritol and 8 drops liquid Stevia)
    * 1 Tbsp molasses (add’s 0.75 g carb per cookie. Worth it.)
    * Mix
    * 1 egg + 1 egg white
    * 1 tsp vanilla extract
    * Mix
    * 2.5 cups almond flour
    * 1/2 tsp xanthan gum for chewiness and to prevent crumbling (or maybe try 1-2 Tbsp vital wheat gluten)
    * 1/2 tsp baking soda + 1/4 tsp baking powder (if you don’t use molasses skip the baking soda and try 1 tsp baking powder)
    * 1/4 tsp salt
    * Mix
    * 1 cup (4oz / 112g) chocolate chips (I use Lily’s premium dark chocolate baking chips)
    * 1 cup walnuts/pecans
    * Make into 20 cookies. Squish down into approximate cookie shape since they don’t spread out much on their own.
    * Bake 15 minutes


    **198 calories**, 18g fat, 4.9g protein, **2.6 net carbs each cookie.** Nutrition calculated using walnuts, carbs would be a little lower with pecans or if you left out the molasses.
