  2. Recipe for smoked salmon frittata

    Ingredients
    8 eggs
    4 oz smoked salmon
    1/3 cup heavy cream
    1 cup grated cheese (I used Gouda)
    2 shallots
    2 T fresh dill
    2 T butter
    Salt and pepper to taste

    -Preheat oven to 400f
    -Roughly chop/tear smoked salmon into bite sized pieces
    -Peel, halve and finely slice shallots
    -Finely chop dill
    -Melt butter in an oven safe frying and add shallots. Cook for 3-5 minutes over medium/low heat or until softened and starting to brown
    -Turn off heat and add cheese to the pan letting it melt over the onions
    -In a medium sized bowl, beat eggs and cream together and add the diil, salt and pepper
    -Return pan to medium heat and add the egg and cream mixture stirring everything together with a wooden spoon
    -Cook the mixture for roughly 3 minutes or until the eggs start to set up slightly
    -Put the pan in the oven for 13-15 minutes. Eggs should be cooked through and you should have a nice brown crust on the bottom
    -Remove from oven and let sit for 5 minutes
    -Slice, serve and enjoy!
