  2. Made in an airfryer, although I’m sure it’ll work just as well fried in a pan too!

    0.8g carb, 27.6g protein, 18.1g fat, 278 calories per scotch egg.



    6 large eggs

    1 egg, beaten

    500g pork mince

    1/4 cup almond flour

    1/4 cup crushed pork rinds

    1/4 tsp paprika

    1 tsp garlic powder

    1 tsp dried mixed herbs

    salt and pepper to taste



    1. Boil the 6 eggs for about 5 minutes, cool, peel, drain on paper towels and set aside.
    2. Mix the pork mince with salt and pepper, 1 tsp mixed herbs and 1 tsp of garlic powder. Divide into 6 portions and set aside.
    3. Mix the remaining dry ingredients – almond flour, paprika, pork rinds and salt and pepper – together to form the “breading” for your scotch egg.
    4. Assembly: Take 1 ball of the pork mixture, flatten it out, and then gently wrap around the egg, sealing it shut. The pork “wrap” should be about 0.5-1cm thick. Repeat for all remaining eggs.
    5. Preheat your air fryer to 180c and coat with nonstick spray.
    6. Gently take a pork wrapped egg, dip and coat it in the beaten egg, and then roll in the “breading” crumb. Work quickly here – and only do this step when you’re ready to cook them otherwise the coating WILL get soggy – and place in air fryer basket once they are all coated.
    7. Cook for 13-16 minutes, turning halfway, until they are all beautifully crisp and cooked through.
    8. Serve with some salad and lots of mayonnaise! Yuuuuuuuuuuuum. Delicious hot or cold.

    What is pork mince? Just like ground pork? Is it seasoned when you buy it?
