  2. I had a hankering for deviled eggs, but I didn’t have pickles or mayo, so I substituted Kalamata olives and sour cream. Add in some home made parm crisps for a salty touch.

    6 eggs, boiled (3.6 g net carbs)
    2 tbsp sour cream (1 g carb)
    1 tbsp finely minced Kalamata olives (0.5 g carb)
    Dash of the olive juice to loosen
    Pinch of salt, cumin, and pepper
    Sprinkle of Cumin for the top

    Each egg comes out to ~0.85 g carb

    Cut the eggs in half and separate the yolks.
    Add the remaining ingredients to the yolks and mix well.
    Spoon the yolk mixture into the halves, and sprinkle with cumin.

    Cheese crisps:
    3 oz of Parmesan, pulverized in a food processor (makes six large rounds) (6 g carb)

    Preheat oven to 400 degrees
    Line a cookie sheet with parchment paper
    Spoon cheese by the tbsp and spread out into rounds
    Bake for 3-4 minutes until they start to take on some color
    Like bacon, it’ll crisp as it cools.

    If I’m doing my math correctly, each parm crisp comes out to 1 gram of carb.
