  2. Credit where credit is due, I loosely based it off of [this](https://www.ketovale.com/recipe/keto-salmon-sushi-rolls/) recipe.

    **Recipe per 2 rolls:**

    **Ingredients:**

1 bag (a little over 2.5 cups) frozen riced cauliflower

    2 oz cream cheese

    2 tbsp. rice vinegar

    2 sheets seaweed wraps

shrimp, salmon, avocado, cucumber, and any other ingredients to your preference

    sriracha (optional)

    soy sauce (optional)

    **Directions:**

    1. Cook cauliflower in microwave according to instructions.
    2. Vigorously wring out as much moisture as possible.
    3. Add cream cheese and rice vinegar and stir to until evenly mixed. May need to pop back in the microwave for a few seconds to make the cream cheese easier to stir.
    4. Chill in refrigerator until cold.
    5. Lay out seaweed. Splash water on it to make it more flexible.
    6. Place cauliflower mix down on a little more than half of seaweed wrap on the side that you will start rolling on. Spread all the way to the ends.
    7. Place other ingredients on top of cauliflower mix.
    8. Roll as tightly as you can without tearing the seaweed.
    9. Place in refrigerator for 20-30 minutes. This will make it easier to cut.
    10. Cut, add sriracha, and dip in soy sauce.

    **Macros:**

This heavily depends on the other ingredients you choose to add. My shrimp roll with cucumber and avocado came out to roughly:

    280 calories

    16g fat

    22g protein

    11.5g total carbs – 6.5g fiber = 5g net carbs

This turned out way better than I expected. Will definitely be doing it again!

  3. This looks great!

I have also experimented with making sushi using chopped bean sprouts instead of cauliflower rice and it worked pretty well. At the time, frozen cauli-rice was hard to come by and I hated the mess of making it myself.

  4. Oh wow…this looks great. Sushi is one of my favorite foods I miss. I’m not a riced cauliflower fan but adding the cream cheese and rice vinegar might do the trick. Especially since I love cream cheese in my sushi. I may have to try my hand at rolling! Thanks for the recipe.

  5. Nice job. I will look into making this myself.

I’m having a cheat and going for a real sushi lunch today on my 8 month anniversary of starting Keto and maintaining my goal weight.

  6. I make these too, but I don’t add vinegar. I bet that would be good. I’m going to try that next time! Another filling option is a can of tuna mixed with siracha and sesame oil, kinda tastes like spicy tuna.

  7. Why, with all the places I’ve subbed cauliflower for rice, has it never occurred to me to make sushi? This is incredible. I think you’ve changed my life.
