  2. I didn’t follow a recipe for this, but here’s basically how I made it:


    -1 lb chicken breasts

    -1/2 cup avocado oil, or oil of your choice

    -1 1/4 tsp paprika

    -1 1/4 tsp salt

    -3/4 tsp pepper

    -2 Roma tomatoes

    -4 slices cheese (I used colby pepperjack)

    -6 slices cooked bacon, chopped

    -Olive oil, for drizzling


    1) Trim chicken and cut into uniform sizes. Put chicken cuts in a bag or bowl with the oil, 1 tsp salt, 1/2 tsp pepper, and paprika. Massage the oil and spices into the chicken and set aside.

    2) Preheat grill while the chicken gets a quick marinade.

    3) Slice tomatoes on a diagonal, creating ~1/4 inch slices. Drizzle slices with a little bit of olive oil and sprinkle with about 1/4 tsp salt and 1/4 tsp pepper.

    4) Grill chicken (5 or so minutes on both sides, until cooked) and tomato slices (until skin starts to shrivel up and grill marks form).

    5) Once chicken is done, top each serving with some chopped bacon, 2 slices of tomato, and a slice of cheese. The goal is to melt the cheese over that, so choose your preferred method for that. I just popped it in the microwave. Top the melty cheese with a few more pieces of chopped bacon.
