  2. ok….so I sorta picked and choose what I liked from different recipes. The below is my attempt to write a recipe. It’s a pain. Especially with two toddlers underfoot. I now truly appreciate the people who post all the recipes that use daily. 😊

    that being said, this isn’t a pro written recipe.
    Please read through carefully.

    Also this doesn’t just look pretty, it tastes great too! One my best yet.. which is why I choose to share.

    Lamb Sausage and Beef Shepard’s pie

    Celeriac/cauliflower mash

    1 celeriac root peeled and chopped
    1 medium head of cauliflower
    1/4 cup butter (approx)
    1/2 cup of Hellava good sour cream dip (approx)
    1/4 tsp pepper

    Boil the celeriac root in salted water for 40 mins
    Boil in salted water cauliflower for 20-25 mins until very soft

    Drain both well

    In a large bowl combine the cauliflower and celeriac and using a ricer, mash together.

    Using a immersion blender blend well then
    Add the butter, sour cream and pepper and blend til creamy

    I made the “fauxtato” mixture the night before and put it in the fridge overnight

    Next:

    Lamb and beef Meat mixture

    3 large cloves garlic
    85 grams onion – 2 small
    2 stalks celery
    100 grams carrots – 4 carrots
    (All dices)
    1 tbsp Avocado oil
    1/4 tsp kosher salt

    Sauté the above together for 5/8 minutes til soft

    Add in and cook throughly:

    2 Spicy lamb sausages with casings removed and ground up in the pan with the vegetables (or your preference)

    1 lb of lean ground beef mixed with the lamb and veg

    Then add:
    2 tbsp tomato paste
    2 tsp worchestershire sauce
    2 tsp soy sauce
    1 sprig rosemary chopped
    1/2 beef bullion cube
    1/2 tsp garlic powder
    1/2 tsp oregano
    1/4 tsp black pepper

    When meat is cooked Taste to see if spiced well enough

    Cook well then cool slightly

    Add 2 large egg yolks beaten to the cooled celeriac/cauliflower mash, reserve the 2 egg whites

    Add 1 tbsp of cornstarch or thickener of choice to 2 tbsp of cold chicken stock
    Mix until not lumpy in a small bowl

    Add it to the fauxtato mash and mix well together

    Using an lightly oiled large ceramic casserole dish, add meat mixture.

    Beat the 2 egg whites until frothy and bubbly, add to the coolish meat mixture

    Top the meat mixture with the mash and smooth evenly

    Add a few handfuls of cheeses of your choice as a topping.

    I used about 4 handfuls of Tex Mex, Monterey Jack

    Bake at 380 for 25 mins covered in foil

    Watching carefully, Broil for last 5 mins

    Cool slightly before eating, serve with garden salad
