  2. Apparently this recipe was submitted about 6 months ago, but for those who missed it, check it out!!!

    **Ingredients**
    5 eggs – separated
    4T coconut flour
    4T granulated sweetener of choice
    1t baking powder
    2t vanilla
    3T full fat milk or cream (I used cream)
    125g melted butter

    **Instructions**
    1 Whisk the egg whites until firm and form stiff peaks.
    2 In a separate bowl, mix the egg yolks, coconut flour, sweetener, and baking powder
    3 To the batter, add the melted butter slowly, mixing to ensure it’s a smooth consistency.
    3 Add the milk (cream) and vanilla, mix well.
    4 Gently fold spoons of the whisked egg whites into the yolk mixture. Try to keep as much of the air and fluffiness as possible.
    5 Cook in waffle iron!

    I let my batter rest overnight. When I made it, it looked as though the butter had separated, and I was also worried about it being dry due to the coconut flour, which clumped up immediately but smoothed out after adding the butter and the cream. And damn were they delicious!!! So fluffy and moist!! 10/10 would make again.
