  2. I usually love thin cracker crust but I have not been able develop something with similar consistency.
    If you are interested in making it, here is the recipe:


    3/4 lb raw boneless chicken

    1 egg

    1/2 cup shredded mozzarella or Italian blend cheese

    1/3 cup shredded Parmesan Reggiano

    1/2 tsp garlic powder

    1 tsp onion powder

    1 tbsp Italian seasoning

    1/3 tsp salt


    1/4 cup Marinara sauce (low carb, no sugar added)

    1/2 cup diced tomatoes

    1 cup Italian blend cheese

    15 olives sliced

    Preheat oven to 450f. Set out a sheet pan (cookie sheet), lined with parchment paper or Silpat. Combined all crust ingredients in a food processor until it forms a paste. Place chicken paste on parchment (or Silpat), cover with another piece of parchment and roll with a rolling really thin but not quite thin enough to see through.

    Remove top parchment and bake crust in oven for 10 min. Pull crust out of oven, top with marinara and other toppings. Bake for another 10 min. Enjoy 😊
