  2. Keto Corn Dog Muffins


    1/4 cup finely ground almond flour

    2 tablespoons swerve sweetener

    2 teaspoons of baking powder

    2 tsp psyllium husk powder (optional – adds fiber)

    4 large eggs

    2 oz pure salted butter, melted

    4 hot dogs – Applegate Organics or Hebrew National Natural Uncured

    Olive oil spray for pan unless silicone pan


    Pre-heat the oven to 400 degrees

    Mix the almond flour, Swerve and baking powder together.

    Add in the 4 eggs and mix until fully incorporated.

    Now add the melted butter (don’t do this before or it can cook your eggs).

    Cut your hot dogs in 1/4 and put one piece in each of the openings on your mini muffin pan.

    Evenly distribute the faux corn batter over the hot dogs. Don’t worry if they don’t look covered, the batter will rise up and cover them.

    Bake at 400 for about 15 minutes or until the tops are browned.
