    1.5 lb of medium deveined and peeled shrimp
    1 lb smoked sausage
    3 green bell peppers
    1 red bell pepper
    1 onion
    2 cloves fresh garlic chopped
    1 zucchini chopped
    Old bay for shrimp
    Olive oil
    Chicken stock
    Red pepper flakes
    Salt and pepper

    Cook the shrimp with old bay and olive oil (I didn’t measure anything)
    Remove shrimp and add veggies with a little more olive oil cook 3-5 mins and add sausage and garlic, cook thoroughly
    Put shrimp back in skillet cook another minute or so
    Add chicken stock to moisten everything
    Add salt, pepper and red pepper flakes to taste

  3. I make something very similar and it’s my favorite too! I meal prep this almost every other week, using Old Bay since I don’t have cajun seasoning. I’ve thrown in some spinach when I’m not in the mood for peppers and loved it. The recipe I use from The Recipe Critic:

    * 1 pound large shrimp, peeled and deveined
    * 14 ounce pork or chicken sausage, sliced
    * 2 medium sized zucchini, sliced
    * 2 medium sized yellow squash, sliced
    * ½ bunch asparagus, sliced into thirds
    * 2 red bell pepper, chopped into chunks
    * Salt and Pepper
    * 2 Tablespoons olive oil
    * 2 Tablespoons Cajun Seasoning


    1. In a [large bowl]( add the shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper and salt and pepper. Add olive oil and cajun seasoning and toss until coated.
    2. Add to a [large skillet]( and turn to medium high. Cook for about 5-7 minutes until the shrimp is pink and the vegetables are tender.

  4. If you take out half the peppers and half the onion and calculate at 4 servings, it comes out to only about 6.7 net carbs per serving. This is going to depend A LOT on the smoked sausage you use. If you use that crappy Eckrich or Hillshire Farms stuff, yeah your carb count is going to be off the charts because that stuff is like 3-4 carbs per 2 oz. If you use “real” smoked sausage, my local grocery store brand is 1 carb per link.

    Breaking it down simply… 12 oz of legit smoked sausage is about 5 carbs or less. 12 oz of crappy smoked sausage is as much as 24 carbs. Eat good meat, people.

    All this being said, this is going on my menu next week. I’m drooling.
