    **Ingredients**

    1. Hung Curd/Greek Yogurt: 1/4 cup
    2. Onions – 50 gms + 25 gms for cooking
    3. Bell Peppers – 100 gms
    4. Paneer – 50 gms
    5. Ginger Garlic Paste – 1 tsp
    6. Biryani Masala – 1 tsp
    7. Salt to taste
    8. Ghee – 1 tbsp
    9. Cumin Seeds – 1 tsp
    10. Bay Leaves – 2
    11. Cinnamon Stick – 1 inch
    12. Black Cardamom – 1
    13. Green Cardamom – 2-4
    14. Cloves 2-4
    15. Cauliflower Rice – 150 gms
    16. Cilantro – Handful
    17. Mint – Handful
    18. Saffron Strings – A few

    **Method of preparation**

    1. Soak the strings of saffron in warm water and set aside
    2. In a bowl, add the yogurt, biryani masala, salt and mix well
    3. Add the onions, bell peppers, paneer and mix well
    4. Set aside for 15 mins (longer the better) so that it marinates
    5. Set the instant pot in Saute mode
    6. When ready, add 1 tbsp to ghee
    7. Add the cumin seeds, bay leaves, cinnamon sticks, cardamoms, cloves and saute for 30 secs
    8. Add the chopped onions and cook till translucent
    9. Now lets starts layering the Cauliflower Rice and marinated mixture
    10. Layer 1 – Half of the Cauliflower Rice
    11. Layer 2 – Half of the marinated mixture
    12. Layer 3 – Handful of chopped cilantro and mint
    13. Repeats layers 1, 2 and 3 again
    14. Add the saffron water
    15. Close the lid, set the vent in sealing
    16. Pressure cook, Manual for 0 mins
    17. Quick Release
    18. Serve with Raita and Enjoy
